Cacao and Coconut Protein Bars

  1. 1 cup Organic coconut oil, melted
  2. 1 cup protein powder – Vanilla
  3. ¼ cup ground flaxseeds
  4. ¼ cup hemp seeds
  5. ½ cup chopped nuts - pecans, walnuts or almonds
  6. 3 Tbsps raw Organic cacao powder
  7. Add 2 tsps. vanilla extract (optional)
  8. ½ cup Organic unsweetened shredded coconut
  9. 2 Tbsp goji berries or dried unsweetened cherries
  1. Line an 8x8 baking pan or glass dish with parchment paper.
  2. Mix coconut oil, protein powder, flaxseeds, hemp seeds, nuts, cacao and vanilla together in a bowl.
  3. Pour mixture into the baking pan then spread goji barriers and shredded coconut evenly on top.
  4. Place in the fridge for 15-20 minutes or until the coconut oil has hardened.
  5. Cut into 9 pieces.
  1. These bars are best kept refrigerated. If kept out of the fridge for too long, the coconut oil will melt.
  2. I love eating this are a pre or post workout snack.
